Directions
- Peel the plantains and, crosswise, cut them in two. Then cut each part again in two, but lengthwise. When you have the 4 pieces per plantain, fry them over low-medium heat until golden.
- Drain the plantains well and, on a flat surface, over a greased plastic bag flatten them a little with a stone or kitchen mallet; thin each part (until it measures approximately 10 cm long by 6 cm wide), as if you were preparing patacones.
- Having done this, on one portion start putting ground cheese and salt, then cover it with another portion. And continue forming the aborrajados this way.
- Separately prepare a batter by mixing well the eggs, wheat flour, milk, sugar, coloring and, if desired, 1 teaspoon of vanilla extract.
- Pass the aborrajados through the batter and immediately fry them in hot oil until golden. Drain and serve.
