gr papas criollas (small yellow potatoes), peeled and chopped

tbsp pork lard

piece(s) scallion stalks, finely chopped

piece(s) egg yolks, beaten

tsp saffron (or color)

Directions
- Prepare a sofrito with lard, scallion, color and salt.
- Cook potatoes until tender, and mash or pass through a sieve, add yolks and saffron.
- Knead everything well.
- Take small portions and form flat little cakes, which are fried in a pan with very little hot oil, until golden.
