Ingredients
500 gr pastusa potatoes, peeled and chopped
500 gr papas criollas (small yellow potatoes), peeled and chopped
3 tbsp pork lard
3 piece(s) scallion stalks, finely chopped
2 piece(s) egg yolks, beaten
1 tsp saffron (or color)

salt
Directions
  1. Prepare a sofrito with lard, scallion, color and salt.
  2. Cook potatoes until tender, and mash or pass through a sieve, add yolks and saffron.
  3. Knead everything well.
  4. Take small portions and form flat little cakes, which are fried in a pan with very little hot oil, until golden.
