500 gr ground beef (top round)
1 cup(s) dry rice or chickpeas, cooked and ground
1 piece(s) large red bell pepper, chopped
1 piece(s) ripe tomato, peeled and chopped
2 piece(s) white onions, chopped
2 piece(s) green onion stalks, chopped
2 clove(s) garlic, chopped
2 piece(s) hard-boiled eggs, chopped
pinch of cumin
pinch of pepper
1/2 tbsp achiote (annatto)
2 tbsp pork lard or oil
salt
Directions
  1. Sauté the onions and garlic, add the meat and tomatoes, season with salt and pepper.
  2. Cook until the meat is done and the mixture thickens.
  3. Use to fill pastelitos (small pastries).
