Ingredients
12 cup(s) water
500 gr yellow Chocó corn
500 gr beef, dried or smoked, cut into pieces
250 gr white onion, peeled and chopped
1 piece(s) ripe tomato, peeled and chopped
4 piece(s) green onion stalks, finely chopped
250 gr white Chocó cheese, cut into pieces
1/2 tsp ground cumin
pinch salt and bija (annatto) to taste
Directions
  1. Wash the corn and crack it, passing it through the grinder on coarse setting.
  2. Wash again very well, rubbing to remove the chaff (husk).
  3. Soak in the 12 cups of water for 2 hours, then cook on high heat for an hour and a quarter.
  4. Add the meat (very well washed), onions, tomato, cumin, bija, and let cook for approximately 20 minutes, until the meat is tender.
  5. Add the cheese, reduce heat, stir and cook for 10 more minutes.
  6. Adjust salt (if necessary add a little more).
  7. Remove and let rest a few minutes, serve accompanied by roasted and mashed green plantain, or fried as patacones.
