piece(s) medium potatoes, peeled and chopped

Directions
- Soak the rice in the cold broth for 1 hour.
- Add the potatoes, oil, cilantro and parsley, salt, pepper and cumin, and cook for about 25 minutes, until the potatoes soften.
- Separately, make an omelet with the eggs, let cool, cut in small cubes and add to the soup.
- Always serve accompanied by ground meat and ripe plantain slices.
