10 cup(s) caldo básico [see p. 78]
1 cup(s) raw rice
4 piece(s) medium potatoes, peeled and chopped
2 tbsp oil
2 piece(s) onions, peeled, chopped and ground
1 tbsp cilantro and parsley, chopped
4 piece(s) beaten eggs
Directions
  1. Soak the rice in the cold broth for 1 hour.
  2. Add the potatoes, oil, cilantro and parsley, salt, pepper and cumin, and cook for about 25 minutes, until the potatoes soften.
  3. Separately, make an omelet with the eggs, let cool, cut in small cubes and add to the soup.
  4. Always serve accompanied by ground meat and ripe plantain slices.
